From what I can tell from the outside, Indian cuisine is one of the most difficult to make. Honestly, I have no idea if this is a true statement or not – but it seems that way. So of course, I would rather give up before trying, and attempt to find a quick version, than learn the real thing.
But let me tell you – easy curry lamb is no slouch. (Nor is it actually Indian, but we’ll let that slide for now.)
If you want a great spiced lamb dish, but dont have time or skill to get into it, this one’s specifically for you. All you need is a medium grade cut of lamb or better, 1/2 an onion, some curry powder, salt, pepper and a side. First, saute the onion until they lose some of their white. Rub salt + pepper to taste and rub in a fairly generous amount of curry powder onto both sides of the lamb. Throw it in the pan with the onions for a few minutes, until it looks just cooked on the outside. Once it starts to gain juuuuust a hint of char, remove your pan from the flame, and put it in the oven on 350 for about 20 minutes. Let it all sit in the oven until its cooked through. This will keep it moist, and cook the lamb all the way through.
We prefer to put this on a bed of cous cous, and it makes a startlingly simple but incredibly flavorful dish. Just a few ingredients, about 30 minutes, and you can serve this at any party. I can’t understate how much bang for your buck, in terms of effort, that you get on this one. Give it a try!
